I was taught to bbq from my wifes uncle who was not by a black guy.

Black people are the true "Qers"

My favorite thing to smoke is

spare ribs and dark chicken..2-3 hours

My favorite thing to grill is pork country ribs

I usually go about an hour on the grill...indirect heat.

I used to get all crazy with these rubs and stuff but now I just go with onion salt and garlic powder.

Again it is how my wifes uncle does it and it just seems to me to have a "black authentic bbq" taste.

Intresting in learning what kind of meats you guys prefer, what type of spices and what is your method of cooking.

yes natural coals...by stacker...i think you mean the thing you put the charcoal in and light it with paper on the bottom?

Heres a tip...use a bit of cooking oil on your paper and a shot's worth over the charcoal..It will act like a candle...it will make the paper burn...but slower..you know sometimes that paper burns without the coals lighting all the way.
